This is my newest cooking area that I have been experimenting with. As an avid backpacker I like to keep things as light as possible. However,  After a long day of peak-bagging there is nothing better than a fresh meal.  What I have been doing is combining both fresh with lighter weight or dehydrated foods.

Pudding with a Punch!

This is the simplest recipe packed with fiber, Omega 3's and protein.  I find this a perfect afternoon pick me up or an after dinner treat.
  • 1.5 heaping Tablespoon Chia seeds
  • 1 handful of shredded coconut, lightly sweetened (I get the Trader Joe's brand, so yummy)
  • 1 small handful of your favorite chopped nuts (I love sliced almonds)
  • 1 handful of chopped dried mango's (I get the Trader Joe's mango's and chop them myself)
  • 1/2 cup water (a little more if you'd prefer it not as thick)
Mix the water with the Chia seeds. Let stand about 5 minutes ( more if you'd like) Then mix the other ingredients and stir.  Get ready for the WOW with each bite.

Tostada Nachos

A very simple and delicious meal. Perfect for that happy hour shared meal. It's relatively light weight too.
  • 1 package of flat Tostada shells (usually have 10)
  • 2-3 avocados (pits removed prior to packing)
  • 3-4 tomatoes (I like Roma, they are a nice medium size)
  • 1/2 cup Dehydrated cheese (I like the Augason Farms)
  • Dehydrated beans. I used my Bear Burrito recipe, but any dehydrated beans will work or you can even bring a can of beans.
  • Individual taco sauce packages (Tacobell has some great options)

    The first thing you will want to do is cook/rehydrate the bear burrito/beans. Next dice the tomatoes. To rehydrate the cheese its equal parts hot water to cheese powder. The avocado's you can just mash them within the skins (since you left the pits at home)

    Their is a single tostada shell per person (group of 10). You can either break the shell into chip like pieces or leave it flat. Place shell or shell pieces into a bowl or plate. Begin by placing the hot bean mixture and stack all ingredient onto it. Then pour the hot cheese mixture and taco sauce. Its pretty simple. Just stack and eat! Then go for round two!
